Soil Science #7: Terrior the Taste of Soil terroir photo

There’s a great debate among self-proclaimed “foodies” about the significance of microclimates, geography, water, and, of course, soil on the flavors we associate with wines, cheeses, breads, meats, poultry, garden vegetables, and just about everything we eat that hasn't been processed. I’m talking of course about terroir. Terroir (tair-WAHR) is the French term for soil often used in conjunction with the phrase gout de terroir or, taste of the soil. The term is particularly beloved among wine lovers. If you've seen Dirt! The Movie, you’ll undoubtedly recall the scene in which a well-regarded wine expert compares the flavor of the Sangiovese he just chugged to a pinch of the vineyard sandy loam...

As the weather starts to break away from the cold winter and sunlight starts peeking out from the sky we being to think “Spring.” It may still be chilly outside, but Spring is officially here! If you did not prepare your garden during the fall, we will teach you how to prepare your garden in the spring. Let’s begin with knowing your soil from our last blog post and then learning how to bring life back to your soil!

It's best to start with a clean garden area, so any dead leaves and other debris should be removed. You can do this even when the ground is frozen, so when the ground thaws you can go straight to the soil.

In some regions it still might be too cold and the ground is still probably frozen. If that is the case then I would wait until the ground warms up so the soil is easy to work with. Working in the soil too early can harm the soil structure...

In this third installment in the Everyday Soil Science series, we move our discussion from soil as a “living” ecosystem “fed” with life-giving organic matter to the abiotic “mineral fraction” comprised of sand, silt, and clay particles.

In the soil world, being small rules. The diameter of sand particles ranges from 2mm to 0.05mm, silt particles from 0.05mm to 0.002mm, and clay less than two microns (about the size of a bacterium). As the particles get smaller, they get more difficult to see, and in fact, clay particles are invisible to the naked eye. Unable to actually see the proportion of sand, silt, and clay in a soil, soil scientists have cleverly utilized the difference in how each particle “feels” to determine the relative proportion in a given sample of soil.

To understand how each particle feels, let’s think about clothing. Imagine a burlap jacket or wool sweater against your skin. How would that feel? How about rayon, silk, or satin? And Velcro? We can associate the feel of the clothing examples with the feel of sand, silt, and clay. Sand is rough or “gritty” like burlap. Silt is soft and “smooth” like silk, and clay is “sticky” like Velcro.

Why top dress?

Top dress is necessary for some because of the environmental damage, such as heat and drought, which was caused during the season. The best time to top dress your lawn is actually now! Autumn is a good time to top dress your lawn because you want the top dress to be thoroughly set in with your native soil and you also want to be able to mow the lawn a couple of times before winter comes. Top dressing can be hard labor, but the results will be very rewarding.
